Spinach, tomato, and feta stuffed portobello mushrooms make a delicious vegetarian meal or side dish.
Ingredients:
  • 4 large portobello mushroom caps
  • 1 cup crumbled feta cheese
  • 1 cup torn fresh spinach
  • 4 small Campari tomatoes, sliced
  • 0.5 teaspoon dehydrated minced garlic, or to taste
  • salt and ground black pepper to taste
  • 1 teaspoon balsamic vinegar, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare two 9x13-inch baking pans by lining them with parchment paper.
  • In each baking pan, nestle 2 mushroom caps. Fill each cap with 2 tablespoons feta cheese, followed by 1/4 cup spinach and another 2 tablespoons of feta. Arrange tomato slices on top, sprinkle with garlic, and season with salt and pepper.
  • Place in the hot oven and bake for 30 minutes.
  • Before serving, drizzle the dish with balsamic vinegar for a burst of tangy flavor.
