Stuffed vine-ripened tomatoes with rocket salad

Vibrant stuffed tomatoes burst with seasonal flavor and visual appeal.
Ingredients:
  • 8 large vine-ripened tomatoes
  • 1 small tub pesto pasta salad
  • 185g can tuna in spring water, drained and flaked
  • 80g packet baby rocket
  • 40.00 ml balsamic vinegar
  • Salt & freshly ground black pepper
  • 82.50 ml shaved parmesan
Instructions:
  • Preheat the oven to 220°C. Remove the tops of the tomatoes, then use a spoon to scoop out and discard the seeds. Arrange the tomatoes and their tops on a baking tray and bake for 10 minutes, or until they are just soft.
  • Mix pesto pasta salad with tuna, then stuff into tomato halves. Drizzle rocket with olive oil and balsamic vinegar, and sprinkle with salt and pepper.
  • Split the dressed arugula evenly among the serving plates. Top the tomatoes with shaved Parmesan and then cover them. Enjoy promptly.
