Savor the aromatic herb-infused succotash with baby lima beans, sweet corn, and savory ham.
Ingredients:
  • 2 boxes (9 oz each) frozen baby lima beans
  • 2 tablespoons butter
  • 6 oz smoked ham, coarsely chopped (about 1 1/2 cups)
  • 1 small red bell pepper, chopped (1/2 cup)
  • 1/3 cup finely chopped shallots
  • 1 bag (1 lb) frozen baby gold and white corn, thawed
  • 2 teaspoons sugar
  • 1/2 teaspoon freshly ground pepper
  • 1 cup whipping cream
  • 1 tablespoon finely chopped fresh chives
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh tarragon leaves
Instructions:
  • Microwave lima beans per package instructions and then drain.
  • In a large skillet, melt butter over medium-high heat. Sauté the ham in the butter for 3 minutes until lightly browned. Add bell pepper and shallots; cook for an additional 3 minutes until tender.
  • Combine lima beans, corn, sugar, salt, and pepper in a pot and cook for 6 minutes, stirring regularly. Pour in cream and continue cooking for 10 more minutes, stirring occasionally, until vegetables are tender and cream is slightly thickened. Finish by stirring in chives, parsley, and tarragon.
