Indulge in irresistible roast lamb with sweet honey stuffing.
Ingredients:
  • 1.5kg leg of lamb, boned
  • 40g butter
  • 57.20 gm honey
  • 500.00 ml fresh breadcrumbs
  • 1 egg, lightly beaten
  • 1 tsp crushed garlic
  • 1 1/2 tsp dried rosemary
Instructions:
  • Preheat your oven to 200°C and carefully butterfly the lamb leg to lay it flat.
  • In a saucepan, gently melt butter and honey together until fully combined. In a bowl, combine breadcrumbs with egg, garlic, 1 teaspoon of rosemary, half of the butter mixture, salt, and pepper. Use your hands to mix everything thoroughly.
  • Place the stuffing along the centre of the lamb leg, then roll it up and secure tightly with string. Brush the lamb with the remaining butter mixture and sprinkle with the remaining rosemary.
  • Grease a large roasting pan and place the lamb in it. Roast in the oven for 10 minutes at high heat, then lower the temperature to 160°C and continue roasting for 45 minutes for medium doneness. Transfer the lamb to a cutting board, cover it with foil, let it rest for 10 minutes, then slice and serve.
