Zacatecas-style seared chicken in tomatillo sauce, served with warm tortillas and your choice of rice or beans. Pair with a cold cola for the perfect meal.
Ingredients:
  • 1 (3 1/2) pound whole chicken, cut into 6 pieces
  • 1 pound fresh tomatillos, husks removed
  • 2 dried California chile pods
  • 3 dried red chile peppers
  • 2 tablespoons olive oil
  • salt to taste
Instructions:
  • Preheat your oven to 350 degrees F (200 degrees C). Arrange tomatillos, California chilies, and red chile peppers on a baking sheet. Roast for 20 minutes, rotating occasionally. If the chilies darken too quickly, transfer them to a blender or food processor.
  • In a large skillet over medium-high heat, heat the oil until shimmering. Add the chicken pieces and sear on all sides until beautifully golden brown.
  • Blend tomatillos and chilies until smooth. Season with salt, then pour over chicken. Simmer covered on medium-low heat until chicken is tender, about 20 to 25 minutes.
