Enhance cookie flavor with toasted buttery pecans.
Ingredients:
  • 1 cup butter
  • 1/2 cup finely chopped pecans
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon vanilla
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 cup powdered sugar
Instructions:
  • In a small saucepan, melt butter over medium-high heat. Add pecans and stir constantly for about 5 minutes until butter starts to brown. (Be sure to stir gently to avoid burning the nuts as the butter foams up.) Remove from heat and transfer to a bowl. Chill in the refrigerator for 15 to 20 minutes until the mixture cools.
  • Preheat oven to 350°F. In a large bowl, use an electric mixer on medium speed to combine the cooled butter-pecan mixture and granulated sugar until well mixed. Mix in cinnamon and vanilla. Gradually add flour on low speed until dough forms.
  • Shape the dough into 1-inch balls and place them on ungreased cookie sheets.
  • Bake for approximately 12 minutes or until cookies are lightly golden brown (avoid overbaking). Remove the cookies from the baking sheets and transfer them to cooling racks. Allow them to cool for 1 to 2 minutes.
  • In a medium bowl, add powdered sugar. Roll warm cookies in the powdered sugar until coated, then place them back on the cooling racks. Let the cookies cool completely for about 15 minutes. Roll the cooled cookies in powdered sugar again.
