Irresistible mini gingerbread muffins, perfect for holiday parties and potlucks.
Ingredients:
  • 0.66666668653488 cup light molasses
  • 0.5 cup margarine, softened
  • 0.25 cup white sugar
  • 0.25 cup firmly packed brown sugar
  • 1 egg
  • 2 teaspoons lemon zest
  • 1.5 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 2.5 cups all-purpose flour
  • 1 (8 ounce) container low-fat sour cream
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and generously grease two 24-cup mini muffin pans.
  • In a large bowl, blend together molasses, margarine, white sugar, brown sugar, egg, lemon zest, baking soda, cinnamon, ginger, and cloves using an electric mixer on medium speed until fully combined. Then, add flour and sour cream, and beat until fully mixed.
  • Fill the prepared muffin cups with batter, leaving 1/4 of the space at the top.
  • Bake in the preheated oven for 10-12 minutes until a toothpick inserted in the center of a muffin comes out clean. Cool for 5 minutes before removing from pans.
