Crunchy sugar-toasted almonds and tangy poppy seed dressing elevate a refreshing spinach and romaine salad.
Ingredients:
  • 0.5 cup slivered almonds
  • 3 tablespoons white sugar
  • 0.75 cup red wine vinegar
  • 0.33333334326744 cup salad oil
  • 2 tablespoons yellow mustard
  • 0.75 tablespoon poppy seeds
  • 1 head romaine lettuce, torn into bite sized pieces
  • 1 (6 ounce) bag baby spinach leaves
  • 0.75 pound sliced mushrooms
  • 0.75 pound shredded Swiss cheese
  • 1 red onion, chopped
  • 1 cup mandarin oranges
Instructions:
  • In a small skillet over medium-high heat, caramelize the almonds with sugar by cooking and stirring for about 3 minutes until the sugar is completely melted. Transfer the almonds to waxed paper in a single layer to cool.
  • Combine vinegar, salad oil, sugar, mustard, poppy seeds, and salt in a bowl and whisk until well blended; let it sit while you prepare the salad.
  • Combine the romaine lettuce, spinach, mushrooms, Swiss cheese, onion, and oranges in a large bowl. Toss with almonds and drizzle dressing right before serving.
