Sugar-and-Spice Espresso Cookies

Espresso-infused cookies with a sweet and spicy twist!
Ingredients:
  • 1 1/2 tablespoons instant espresso coffee granules
  • 1 tablespoon hot water
  • 1/2 cup butter or margarine, softened
  • 1/4 cup shortening
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon instant espresso coffee granules
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 teaspoons instant espresso coffee granules
Instructions:
  • In a large bowl, blend 1 1/2 tablespoons of espresso in hot water. Use an electric mixer to beat in butter, shortening, 1 cup of granulated sugar, brown sugar, and egg until fluffy. Slowly add flour, baking powder, 1 teaspoon of espresso, cinnamon, and salt, mixing on low speed.
  • Divide the dough in half and shape each portion into a 10-inch-long roll. Wrap both rolls in plastic wrap and chill in the refrigerator for 30 minutes.
  • Mix the coating ingredients on a large plate. Roll each roll of dough in the coating, making sure to save any extra coating. Wrap the coated dough rolls in plastic wrap and refrigerate for an additional 2 hours.
  • Preheat oven to 375°F. Slice each roll into 1/4-inch slices. Place slices 2 inches apart on an ungreased cookie sheet and sprinkle with the remaining coating.
  • Bake for 8 to 10 minutes until edges are golden brown. Allow to cool briefly, then transfer from the baking sheet. Cool completely before enjoying.
