Sukju Namul (Mung Bean Sprout Salad)

Sukju namul: A vibrant salad of mung bean sprouts, carrot, and green onion tossed in garlic and sesame oil dressing.
Ingredients:
2cups water
1poundmung bean sprouts
1baby carrot, cut into matchsticks
1green onion, cut into 1-inch pieces
1teaspoonsesame oil
1teaspooncrushedgarlic
0.5 teaspoonsalt
0.25 teaspoongroundblack pepper
0.25 teaspoonsesame seeds
Instructions:
Bring a pot of water to a rapid boil. Drop in the mung beans and cook for 5 minutes until tender. Drain the beans, then rinse under cold water to halt cooking. Transfer to a bowl after draining well.
Place baby carrots and green onions in a small microwave-safe bowl, cover with water, and microwave for 30 seconds. Then, drain.
Combine baby carrots and green onions with bean sprouts in a bowl. Add sesame oil, garlic, salt, pepper, and sesame seeds. Mix by hand until well combined.
