Sukju namul: A vibrant salad of mung bean sprouts, carrot, and green onion tossed in garlic and sesame oil dressing.
Ingredients:
  • 2 cups water
  • 1 pound mung bean sprouts
  • 1 baby carrot, cut into matchsticks
  • 1 green onion, cut into 1-inch pieces
  • 1 teaspoon sesame oil
  • 1 teaspoon crushed garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon sesame seeds
Instructions:
  • Bring a pot of water to a rapid boil. Drop in the mung beans and cook for 5 minutes until tender. Drain the beans, then rinse under cold water to halt cooking. Transfer to a bowl after draining well.
  • Place baby carrots and green onions in a small microwave-safe bowl, cover with water, and microwave for 30 seconds. Then, drain.
  • Combine baby carrots and green onions with bean sprouts in a bowl. Add sesame oil, garlic, salt, pepper, and sesame seeds. Mix by hand until well combined.
