Slow-roasted zucchini, bursting with flavor, makes a delightful side dish.
Ingredients:
  • 4 medium zucchini, trimmed, halved lengthways, thickly sliced
  • 1 large red onion, cut into wedges
  • 1 medium lemon, juiced
  • 1 tsp sumac (see note)
  • 18.20 gm olive oil
  • 82.50 ml fresh coriander leaves
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Combine zucchini, onion, lemon juice, and sumac in a large roasting pan. Drizzle with oil and toss until evenly coated.
  • Roast the zucchini until tender, seasoning with salt and pepper. Garnish with fresh coriander before serving.
