Sumac kebabs on couscous tabouli

Middle Eastern-inspired chicken dish bursting with flavor - perfect for a healthy and satisfying meal anytime.
Ingredients:
  • 6 chicken thigh fillets, cut into 3cm pieces
  • 2 garlic cloves, crushed
  • 20.00 ml sumac
  • 1 tsp ground coriander
  • 36.40 gm extra virgin olive oil
  • 250ml chicken stock
  • 190g couscous
  • 250.00 ml coarsely chopped flat-leaf parsley
  • 125.00 ml coarsely chopped mint
  • 2 green onions, trimmed, thinly sliced
  • 250g cherry tomatoes, halved
  • 60ml lemon juice
  • Tamar Valley Greek Style Yoghurt, to serve
  • Pita bread, to serve
Instructions:
  • In a medium bowl, mix together the chicken, garlic, sumac, coriander, and half of the oil. Season with salt and pepper, then thread the chicken onto bamboo skewers.
  • 1. Preheat a char-grill pan or large frying pan over high heat. Add the chicken skewers and cook for 5-7 minutes, turning occasionally, until they are golden and fully cooked. Then, remove from the heat and let them rest.
  • In a saucepan over high heat, bring the chicken stock to a boil. Remove from heat, add the couscous, and stir well. Cover and let it sit for 5 minutes. Fluff the grains with a fork, then transfer to a bowl. Mix in the parsley, mint, onion, tomatoes, lemon juice, and remaining oil until combined. Season with salt and pepper to taste.
  • Divide the couscous onto plates. Place the kebabs on top. Serve promptly with optional Greek yogurt and pita bread.
