Summer Mediterranean salmon: Perfect for casual outdoor gatherings.
Ingredients:
  • 4 x 180g skinless salmon fillets, pin-boned
  • 60ml olive oil
  • 40.00 ml sumac (see note)
  • Juice of 1/2 lemon, plus wedges to serve
  • 2 oranges, peeled, segmented
  • 2 pink grapefruits, peeled, segmented
  • 250.00 ml flat-leaf parsley leaves
Instructions:
  • Brush the fish fillets with oil, then generously season and coat them in a flavorful mixture of sumac and cumin spices.
  • In a large frypan over medium heat, heat 1 tablespoon of oil. Sear the fish for 2 minutes on each side until it's charred on the outside and almost cooked through, leaving the centre slightly pink. Cover loosely with foil and set aside to prepare the salad.
  • Combine lemon juice and 2 tablespoons of oil, season to taste. Toss fruit and parsley in the dressing. Serve fish alongside salad with lemon wedges.
