Sumac's zesty kick perfectly complements succulent lamb.
Ingredients:
  • 45.50 gm extra virgin olive oil
  • 8 (about 1kg) carrots, peeled, cut into 1cm slices
  • 1 garlic clove, crushed
  • 14.40 gm honey
  • 250ml (1 cup) water
  • 1 small lemon, rind finely grated, juiced
  • 1 small red onion, thinly sliced into rounds
  • 2 (about 400g) lamb backstraps
  • 5 tsp sumac
  • 80g baby rocket leaves
  • 250.00 ml fresh mint leaves, firmly packed
  • 40g (1/4 cup) pistachios, roasted, chopped
  • Sumac, extra, to sprinkle
Instructions:
  • In a saucepan over medium heat, warm 1 tablespoon of oil. Add in the carrot and cook while stirring for 5 minutes. Next, add the garlic and 1 teaspoon of honey, continuing to stir for 1 minute. Pour in water and season. Lower the heat to low, cover, and cook for 20 minutes until tender. Uncover, simmer for an additional 6 minutes until most of the water has evaporated. Use a stick blender to blend the mixture until nearly smooth, then stir in 1⁄2 teaspoon of lemon rind.
  • Place the onion in a heatproof bowl and cover it with boiling water. Let it stand for 2 minutes, then drain and refresh it under cold running water. In a bowl, whisk together 2 tablespoons of lemon juice, 1 tablespoon of oil, and the rest of the honey. Season to taste and add the onion. Set it aside to enhance the flavors.
  • Massage lamb with 1 tsp of oil and season generously. Spread sumac on a plate and coat the lamb by pressing it gently onto the sumac. Heat the rest of the oil in a non-stick pan over medium heat. Sear the lamb for 5 minutes for medium doneness, then let it rest for 3 minutes before slicing and serving.
  • In a bowl, mix rocket, mint, onion, and half of the pistachios. Divvy up the carrot smash onto plates. Layer with lamb. Serve with a side of mint salad, then sprinkle with the rest of the pistachios and a little extra sumac.
