Summer berry party punch

Elevate your punch with a splash of gin, vodka, white rum, or Chambord for a sophisticated twist.
Ingredients:
  • 250g strawberries, hulled
  • 1.25L btl lemonade
  • 125ml (1/2 cup) pink grapefruit cordial
  • 2 limes, juiced
  • 125.00 ml fresh mint leaves, plus extra, to serve
  • 2 x 125g punnets fresh raspberries
  • Lime slices, to serve
  • Crushed ice, to serve (optional)
  • 1 lime, rind finely grated, cut into wedges
Instructions:
  • Finely chop half of the strawberries in a food processor. Blend in 1 tablespoon of lemonade until smooth. Transfer the mixture into star-shaped ice cube trays and freeze for 1-2 hours until solid.
  • In a large pitcher or punch bowl, combine cordial, lime juice, mint leaves, and half of the raspberries. Use the end of a rolling pin to gently crush the ingredients. Add the strawberry ice cubes, lime slices, and remaining lemonade, then stir gently to mix. Thinly slice the remaining strawberries and add to the punch with the remaining raspberries, extra mint leaves, and ice if desired. Stir again to combine all ingredients.
  • Create a zesty lime sugar by mixing sugar with lime zest on a plate. Rim each glass with a lime wedge, then coat in the lime sugar.
  • Serve the punch in the glasses.
