Summer Strawberry Pie: A simple and delightful dessert featuring fresh strawberries - perfect for entertaining.
Ingredients:
  • 0.75 cup white sugar
  • 3 tablespoons cornstarch
  • 1 pinch salt
  • 1 cup water, divided
  • 3 tablespoons lemon juice
  • 0.5 teaspoon almond extract
  • 3 drops red food coloring, or as desired
  • 3 cups fresh strawberries, sliced
  • 1 (9 inch) baked pie crust
  • 8 ounces heavy whipping cream
  • 3 tablespoons confectioners' sugar, or to taste
Instructions:
  • Combine sugar, cornstarch, and salt in a medium saucepan, then stir in 3 tablespoons of water until a smooth paste forms.
  • Once the water comes to a boil, gradually pour it into the sugar mixture. Allow the mixture to gently simmer over low heat, stirring constantly, until it thickens and turns clear, approximately 5 minutes. Take the pot off the heat and mix in the lemon juice, almond extract, and red food coloring.
  • Allow the mixture to cool for a minimum of 15 minutes, then gently combine with fresh strawberries. Transfer the mixture into the ready pie crust and refrigerate until firm, for at least 1 hour.
  • In a mixing bowl, whip heavy cream using an electric mixer until stiff peaks form. Slowly add confectioners' sugar until well combined. Spread the topping over the chilled pie.
