Elevate green beans, ham, and red potatoes with zesty dry vegetable soup mix. Perfect as a standalone meal or a crowd-pleasing potluck side!
Ingredients:
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 1 ham hock
  • 2 pounds fresh green beans, trimmed
  • 12 small red potatoes
  • 1 (.4 ounce) packet dry vegetable soup mix
  • 1 tablespoon white sugar
  • 1 tablespoon ground black pepper
Instructions:
  • In a large pot, heat the oil and butter until sizzling. Add the ham hock and sear until golden on both sides. Lower the heat and add green beans and potatoes to the pot. Pour in enough water to cover everything.
  • Combine the soup mix, sugar, and pepper in a pot. Let it simmer for 1 hour or until the beans and potatoes are tender. Remove the hock and shred the meat into the pot before serving.
