Vegan tomato okra stew with onions and garlic: A versatile and flavorful dish for any meal.
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 sweet onion (such as Vidalia®), diced
  • 1 clove garlic, minced
  • 3 cups diced fresh tomato
  • 1.5 cups sliced fresh okra
  • 1 pinch salt and freshly ground black pepper to taste
  • 1 drizzle extra-virgin olive oil
Instructions:
  • In a 2-quart saucepan, warm 1 tablespoon of olive oil over medium-low heat. Sauté onion and garlic until they start to caramelize, about 15-20 minutes. Stir in tomato and okra; season with salt and pepper. Continue cooking, stirring occasionally, until the okra is tender and the tomatoes have released their juices, about 30 minutes.
  • Present in wide bowls generously drizzling extra-virgin olive oil and sprinkling freshly ground black pepper.
