Sun-dried tomato and ricotta dip

Ingredients:
  • 300g ricotta
  • 62.50 ml sun-dried tomatoes, finely chopped
  • 40.00 ml finely chopped fresh basil leaves
  • 20.00 ml toasted pine nuts
  • 18.20 gm extra-virgin olive oil
Instructions:
  • Combine ricotta, tomato, basil, pine nuts, and half of the oil in a bowl. Season with salt and pepper, then gently mash together with a fork. Drizzle with the remaining oil before serving.
