Superfruit sundaes

Overnight breakfast that's ready in a snap for a healthy and quick morning meal!
Ingredients:
1ripe mango
3ripe passion fruits
80 ml coconut milk
40 g chia seeds
1lime
40 g mixed nuts and seeds
50 g jumbo oats
1tablespoonrunny honey
250 g frozen berries
1slice of wholemeal bread
100 g natural or soy yoghurt
300 g mixed fresh fruits such as cherries, blueberries, apricots, pineapple
Instructions:
The night before serving, peel and pit 1 ripe mango, cut into chunks, and place in a blender. Add the flesh of 1 passion fruit, 80ml coconut milk, and blend until smooth. Transfer to a bowl, stir in 40g chia seeds, lime zest, and juice. Divide into glasses or jars, cover, and refrigerate. In a pan over medium heat, toast 40g mixed nuts, 50g oats until golden. Drizzle with 1 tbsp honey, mix, and cool overnight. In the morning, blend 250g frozen berries, 1 slice wholemeal bread, and 50g yogurt. Spoon over the chilled mango mixture. Top with yoghurt, sticky oats, a passion fruit half, and fresh fruit slices.
