Superfruit sundaes

Overnight breakfast that's ready in a snap for a healthy and quick morning meal!
Ingredients:
  • 1 ripe mango
  • 3 ripe passion fruits
  • 80 ml coconut milk
  • 40 g chia seeds
  • 1 lime
  • 40 g mixed nuts and seeds
  • 50 g jumbo oats
  • 1 tablespoon runny honey
  • 250 g frozen berries
  • 1 slice of wholemeal bread
  • 100 g natural or soy yoghurt
  • 300 g mixed fresh fruits such as cherries, blueberries, apricots, pineapple
Instructions:
  • The night before serving, peel and pit 1 ripe mango, cut into chunks, and place in a blender. Add the flesh of 1 passion fruit, 80ml coconut milk, and blend until smooth. Transfer to a bowl, stir in 40g chia seeds, lime zest, and juice. Divide into glasses or jars, cover, and refrigerate. In a pan over medium heat, toast 40g mixed nuts, 50g oats until golden. Drizzle with 1 tbsp honey, mix, and cool overnight. In the morning, blend 250g frozen berries, 1 slice wholemeal bread, and 50g yogurt. Spoon over the chilled mango mixture. Top with yoghurt, sticky oats, a passion fruit half, and fresh fruit slices.
