Sushi Christmas tree recipe

Japanese-inspired Christmas tree made with two types of salmon and creamy Kewpie mayo, a festive and delicious treat.
Ingredients:
  • 645g (3 cups) sushi rice
  • 185ml (3/4 cup) sushi seasoning
  • 6 nori sheets
  • 80g (1/2 cup) sesame seeds, toasted
  • 125.00 ml chopped parsley
  • Kewpie mayonnaise
  • 300g (2 pieces) hot smoked salmon, skin removed, flaked
  • 1 lemon
  • Salmon roe, to decorate
  • Soy sauce, to serve
  • Wasabi, to serve
Instructions:
  • Prepare the rice according to the instructions on the package. Drizzle with sushi seasoning and gently mix using a large metal spoon. Allow it to cool completely before using.
  • Lay plastic wrap over a bamboo sushi mat. Spread 1 nori sheet on a cutting board. Use damp hands to evenly layer 1½ cups of rice over the nori, covering it entirely. Mix sesame seeds and parsley in a bowl, then sprinkle 2 tablespoons evenly over the rice.
  • Lay the mat over the rice and flip the board so the sushi mat is underneath. Spread a line of mayonnaise across the nori sheet, leaving a 3cm gap at the edge closest to you. Place the salmon next to the mayonnaise.
  • Roll rice and nori tightly around filling using a bamboo mat. Wrap sushi roll in plastic wrap and chill in the fridge as you prepare the other rolls.
  • Trim the ends of the rolls using a sharp knife, then slice each roll into six pieces, discarding the plastic wrap.
  • Create a stunning sushi tree by layering 11 pieces of sushi on a platter, followed by 9, then 7, then 5, finishing with 3 and 1 on top.
  • Cut a large piece of lemon rind, removing the pith. Use a 5cm star pastry cutter to make a star shape. Secure the star to the top of the sushi tree with a toothpick. Sprinkle with salmon roe. Serve with soy sauce and wasabi for dipping.
