Ingredients:
  • 1 (9 inch) unbaked pie crust
  • 1 (10 ounce) package frozen chopped spinach
  • 1 cup plain yogurt
  • 1 tablespoon all-purpose flour
  • 0.25 teaspoon black pepper
  • 4.5 ounces fresh mushrooms, thinly sliced
  • 4 ounces shredded Cheddar cheese
  • 0.25 cup chopped green onions
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C), then prick the pie crust all over with a fork and bake for 5 minutes.
  • Microwave the frozen spinach in a microwave-safe bowl until thawed. Drain excess liquid and then thoroughly pat dry with paper towels.
  • Combine eggs, yogurt or sour cream, flour, and pepper, ensuring they are thoroughly mixed. Gently fold in the spinach. Arrange sliced mushrooms, cheese, and chopped scallions in layers at the bottom of the pie crust. Finish by topping with the spinach mixture.
  • Preheat oven and bake at 375 degrees F for 15 minutes. Reduce temperature to 350 degrees F and continue baking for 30 minutes. Allow to cool before serving.
