Ingredients:
  • 60.00 ml instant coffee
  • 1kg mixed dried fruit
  • 125ml (1/2 cup) brandy
  • 250g block fruit and nut chocolate, roughly chopped
  • 300g (2 cups) self-raising flour, sifted
Instructions:
  • Combine coffee with 1 1/2 cups of boiling water until dissolved. In a large bowl, mix dried fruit, brandy, and coffee mixture, then let it marinate overnight.
  • Preheat the oven to 160°C. Gently melt the chocolate in a bowl over simmering water. Once melted, combine it with the fruit mixture, then fold in the flour. Divide the batter into mini-loaf pans and bake for 25-30 minutes or until done.
  • Let it cool, then transfer it to cellophane bags and seal them with ribbons or clothes pegs.
