Tasty lime-marinated chicken and veggies in warm corn tortillas, topped with lettuce, tomato, sour cream, and your choice of taco sauce, guac, and cilantro.
Ingredients:
  • 2 skinless, boneless chicken breast halves, cut into 1/4-inch wide strips
  • 1 lime, juiced
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon paprika
  • 0.25 teaspoon chili powder
  • 0.125 teaspoon cayenne pepper, or to taste
  • 0.125 teaspoon ground black pepper, or to taste
  • 1 tablespoon olive oil
  • 1 red bell pepper, cut into 1/4 inch strips
  • 0.5 large red onion, sliced 1/4-inch thick
  • 4 (6 inch) corn tortillas
  • 0.25 cup sour cream, divided
  • 0.5 cup shredded Cheddar-Monterey Jack cheese blend, divided
  • 1 cup shredded lettuce, divided
  • 0.5 cup diced tomato, divided
Instructions:
  • Combine the chicken strips with lime juice, cumin, paprika, chili powder, cayenne pepper, and black pepper in a bowl; let marinate for 15 to 30 minutes.
  • Heat a large skillet or wok over medium heat, add olive oil. Sauté red bell pepper and onion until softened, about 5 minutes, pushing them to the edge of the skillet.
  • Add the marinated chicken strips to the center of the skillet and cook while stirring until chicken is cooked through and the juices run clear, approximately 3 minutes. Stir in the vegetables and continue cooking until the liquid in the skillet has evaporated, around 2 more minutes. Remove the chicken and vegetables from the skillet and set aside.
  • Lay corn tortillas on a microwave-safe plate, ensuring damp paper towels are placed between each tortilla. Microwave until tortillas are warm and pliable, approximately 30 seconds.
  • Lay out corn tortillas on serving plates and generously spread each with a dollop of creamy sour cream.
  • Spread a generous portion of the chicken and vegetable mixture on each tortilla, then generously top with a sprinkle of flavorful Cheddar-Monterey Jack cheese blend.
  • Top each tortilla with a generous amount of fresh lettuce and flavorful diced tomatoes.
  • Add your favorite toppings on top; do the same with the rest of the tortillas and ingredients.
