Indulge in Marion Grasby's mouthwatering slow-cooked pork ribs for pure satisfaction.
Ingredients:
  • 250ml (1 cup) gluten-free tomato sauce
  • 250ml (1 cup) gluten-freen sweet chilli sauce
  • 2 (about 600g each) pork rib racks
  • Dried chilli flakes, to taste
  • Coarsely chopped fresh coriander leaves, to serve
Instructions:
  • Preheat your oven to 150C/130C fan forced, then line a large roasting pan with foil. Next, mix together the tomato and sweet chili sauces in a bowl.
  • Lay out the pork ribs in the pan. Drizzle half of the sauce over the ribs, making sure both sides are coated. Cover with foil, sealing the edges tightly. Roast for 2 hours until tender.
  • Take the ribs out of the oven and gently uncover them. Let them rest until they reach room temperature.
  • Preheat a barbecue grill or chargrill pan on medium-high. Set aside a few tablespoons of sauce for basting. Brush the ribs with the remaining sauce using a pastry brush.
  • Chargrill the ribs, brushing frequently with the sauce, until lightly charred, about 3-4 minutes per side.
  • Slice neatly between every 3 ribs using a large, sharp knife. Garnish with chili flakes and fresh coriander before serving.
