Colorful kale side dish with sweet and tangy flavors.
Ingredients:
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 4 teaspoons white sugar
  • 1 tablespoon cider vinegar
  • 1.5 cups chicken broth
  • 4 cups stemmed, torn and rinsed kale
  • 0.25 cup dried cranberries
  • salt and pepper to taste
  • 0.25 cup sliced almonds
Instructions:
  • In a large pot over medium heat, heat olive oil. Add onion and garlic, cook until onion softens, about 5 minutes. Add mustard, sugar, vinegar, and chicken stock, bring to a boil over high heat. Add kale, cover, and cook until wilted, about 5 minutes.
  • Add dried cranberries to the mixture and simmer without a cover until the liquid reduces by half and the cranberries soften, around 15 minutes. Season with salt and pepper to taste. Top with sliced almonds before serving.
