Crispy fried halibut coated in a tangy sweet and sour sauce, easily swap for cod or any white fish.
Ingredients:
  • 1 pound halibut
  • 2 cups oil for deep frying
  • 1 medium green bell pepper, diced
  • 1 medium onion, diced
  • 1 (8 ounce) can pineapple chunks, juice reserved
  • 3 tablespoons ketchup
  • 1.5 tablespoons white sugar
  • 1 tablespoon water
  • 2 teaspoons all-purpose flour
  • 1 teaspoon sesame oil
  • salt to taste
Instructions:
  • Dice the halibut into bite-sized pieces. Place the halibut in a mixing bowl and mix in soy sauce and 1 tablespoon of flour. Allow it to marinate for 30 minutes.
  • Heat oil in a deep-fryer or heavy saucepan until it reaches 375 degrees F (190 degrees C).
  • Fry halibut pieces until crisp and golden. Place on paper towels to drain; set aside.
  • Prepare the sauce: In a medium skillet over medium heat, heat oil. Add bell pepper, onion, and pineapple chunks, sauté for 1 minute. Stir in pineapple juice, ketchup, sugar, water, flour, sesame oil, and salt. Cook until thickened, about 5 to 10 minutes, stirring occasionally.
  • Drizzle the sauce over the halibut pieces for a flavorful finish, or serve the halibut with the sauce on the side for dipping.
