Recreate a delicious and nutritious homemade version of your favorite takeout dish!
Ingredients:
  • 20.00 ml white vinegar
  • 10.60 gm soy sauce
  • 10.40 gm tomato sauce
  • 225g can pineapple pieces in natural juice, drained, juice reserved
  • 10.00 gm cornflour
  • 8.00 gm brown sugar
  • 2cm piece ginger, peeled, finely grated
  • 18.40 gm rice bran oil
  • 500g extra-lean pork stir-fry strips
  • 1 carrot, peeled, cut into matchsticks
  • 4 green onions, thinly sliced
  • 1 medium red capsicum, cubed
  • Steamed rice, to serve
Instructions:
  • In a jug, mix together vinegar, soy sauce, tomato sauce, 1/2 cup reserved pineapple juice, and 1/4 cup cold water. In a saucepan, combine cornflour. Slowly whisk in 1/4 cup of the vinegar mixture until smooth. Pour in the rest of the vinegar mixture. Stir in sugar, garlic, and ginger. Bring to a boil over medium heat, stirring constantly. Lower the heat and simmer for 2 to 3 minutes until thickened. Remove from heat and let it cool for 15 minutes.
  • Preheat a wok over high heat, then add 1 teaspoon of oil, swirling to coat. Cook one-third of the pork for about 1 minute until browned. Transfer to a plate and repeat twice with the remaining oil and pork.
  • In a wok, heat the remaining oil and sauté carrot and onion for 2 minutes. Add pineapple and capsicum, stir-fry for another 2 minutes. Stir in sauce and pork, continue stir-frying for 2 minutes or until heated through. Serve with rice.
