Sweet and sour pork

Classic Chinese dish still served fresh daily at nearby restaurant.
Ingredients:
1egg
20.00 gm cornflour
600g pork fillet, thinly sliced
440g can pineapple pieces in natural juice
130.00 gm tomato sauce
65.63 gm soy sauce
40.00 ml white vinegar
36.40 gm peanut oil
1 large brown onion, halved, thinly sliced
2green onions, cut into 2.5cm lengths
1/2 red capsicum, chopped
1/2 green capsicum, chopped
Steamedjasmine rice, to serve
Instructions:
In a bowl, blend together an egg and half of the cornflour. Mix in the pork until well combined.
Separate pineapple from its juice, saving 2 tablespoons. Combine the rest of the cornflour in a bowl and mix with the reserved juice until smooth. Stir in tomato sauce, soy sauce, and vinegar until well combined.
Heat a wok over medium-high heat until hot, add 1 tablespoon of oil and swirl to coat. Stir-fry the pork in batches for 1 to 2 minutes until browned, then transfer to a bowl.
Pour the rest of the oil into the wok and swirl it around to coat the ingredients. Add the onions and garlic, stir-fry until softened for about 2 minutes. Then, add the capsicum and continue stir-frying until it starts to soften, which should take about 3 to 4 minutes.
Add the pork and its flavorful juices back into the wok. Pour in the sauce mixture and pineapple. Stir everything together and cook for 2 to 3 minutes until the sauce reaches a boil and thickens. Enjoy this delicious dish with steamed rice.
