Sweet and sour pork

Quick and tasty Asian sweet and sour pork with fluffy jasmine rice. Ready in just 20 minutes!
Ingredients:
  • 440g can pineapple pieces in natural juice
  • 80ml tomato sauce
  • 30.00 ml white vinegar
  • 2 garlic cloves, crushed
  • 42.00 gm soy sauce
  • 10.00 gm cornflour
  • 18.20 gm peanut oil
  • 500g pork scotch fillet, cut into 2.5cm pieces
  • 1 leek, thickly sliced diagonally
  • 1 small red capsicum, seeded, chopped
  • 1 carrot, sliced diagonally
  • Steamed jasmine rice, to serve
  • Coriander sprigs, to garnish
Instructions:
  • Drain pineapple, saving 1/3 cup juice. Mix reserved juice with tomato sauce, vinegar, garlic, soy sauce, cornflour, and 2 tablespoons of water in a jug.
  • In a large wok or frying pan, heat oil over medium-high heat. Brown pork in 2 batches for about 3 minutes each. Transfer to a bowl.
  • Sauté leek, capsicum, and carrot in the wok until onion is tender. Add pork, sauce, and pineapple, cooking until pork is cooked through and sauce thickens.
  • Plate the pork over a bed of fluffy rice and garnish with fresh coriander sprigs.
