Crunchy pumpkin seeds with a sweet and spicy twist of curry powder and cinnamon sugar.
Ingredients:
  • 1.5 cups fresh pumpkin seeds, washed and dried
  • 0.25 cup brown sugar
  • 1 tablespoon curry powder
  • 3 tablespoons vegetable oil, or as needed
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C).
  • In a bowl, mix together pumpkin seeds, brown sugar, cinnamon, and curry powder. Gradually drizzle vegetable oil over the mixture until well coated. Spread out the seeds evenly on a baking sheet.
  • Bake in the preheated oven for 10 minutes. Remove the sheet, flip the seeds, and bake, flipping every 10 minutes, until crunchy and golden brown, 20 to 30 minutes in total.
