Sweet Green Tomato Ketchup

A tasty twist on Granny's Green Tomato Ketchup, no canning needed! Enjoy as a side, on potatoes, or with corn chips for a flavorful treat.
Ingredients:
  • 5 green tomatoes, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 white onion, chopped
  • 0.5 cup pickling salt
  • 1 cup white vinegar
  • 0.66666668653488 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 10 tablespoons white sugar
  • 8 whole cloves
  • 1 tablespoon dark corn syrup
Instructions:
  • In a large bowl, alternate layers of tomatoes, bell peppers, and onions, generously seasoning each layer with salt. Continue layering until all the vegetables are used up. Cover the bowl and chill in the refrigerator for 4 to 5 hours.
  • Drain the vegetables in a colander, and refresh them under running water to remove the salt. Transfer them to a lidded pot, and mix in the vinegar, brown sugar, cinnamon, pumpkin pie spice, white sugar, whole cloves, and corn syrup. Bring to a boil, then reduce heat and simmer uncovered for roughly 30 minutes until the tomatoes begin to lighten in color.
  • Once the vegetables are tender, strain them through a sieve, ensuring to locate and discard all cloves. Chill the sauce and refrigerate.
