Sweet potato and black bean salad recipe

Wow your picnic guests with a vibrant and nutritious black bean salad.
Ingredients:
  • 300g orange sweet potato, unpeeled, cut into 1cm pieces
  • 36.40 gm extra virgin olive oil
  • 31.50 gm lemon juice
  • 400g can black beans, rinsed, drained
  • 4 radishes, trimmed, cut into matchsticks
  • 60g baby spinach
  • 1 long green chilli, thinly sliced
Instructions:
  • Preheat the oven to 220C/200C fan-forced and line a baking tray with baking paper. Arrange potato on the tray, drizzle with half of the oil, and season with salt and pepper. Bake for 20-25 minutes until tender.
  • Transfer the sweet potato to a large serving bowl, then add the remaining oil, lemon juice, black beans, radish, spinach, and chili. Season generously with salt and pepper, tossing everything together until well combined. Serve and enjoy!
