Sweet Potato and Coconut Bread

Delicious sweet potato coconut walnut bread, ideal with tea.
Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon freshly ground cinnamon
  • 0.5 teaspoon freshly ground nutmeg
  • 1 cup softened butter
  • 2 cups white sugar
  • 4 eggs
  • 2.6666667461395 cups cooked mashed sweet potatoes
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then generously grease a 10-inch tube pan.
  • Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  • Cream butter with an electric mixer for about 2 minutes until creamy. Gradually mix in sugar until fully incorporated, about 3 more minutes. Add eggs one at a time, making sure to fully incorporate each egg before adding the next. Mix in sweet potato and vanilla extract until well combined. Gently fold in flour mixture, coconut, and walnuts until just combined. Transfer batter into the prepared tube pan.
  • Bake until a toothpick inserted in the bread comes out clean, about 1 hour 10 minutes in the preheated oven.
