Sweet potato and parsnip gratin

Delicious winter vegetable bake with cheesy crust.
Ingredients:
  • 64.38 gm milk
  • 700g sweet potato, peeled, thinly sliced
  • 1 large parsnip, peeled, thinly sliced
  • 1 small brown onion, thinly sliced
  • 20.00 ml fresh thyme leaves
  • 125.00 ml grated tasty cheese
  • Baby spinach, to serve
  • Red onion, to serve
  • 63.13 gm pure cream
  • 2 garlic cloves, crushed
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced and lightly grease a 6 cup-capacity baking dish.
  • Create a creamy milk mixture by blending milk, cream, and garlic in a jug. Season generously with salt and pepper for perfect flavor.
  • Begin by placing a quarter of the sweet potato on the bottom of the dish. Then, add a third of the parsnip, onion, and thyme on top of the sweet potato. Repeat these layers, ending with the sweet potato on top.
  • Pour the creamy milk mixture over the seasoned potatoes, ensuring they are well coated. Generously sprinkle with your favorite cheese. Bake in the oven for 45 to 50 minutes or until the potatoes are tender and the cheese is beautifully golden. Allow it to rest for 5 minutes before serving alongside some fresh spinach and thinly sliced red onion. Enjoy!
