"Delicious sweet potato burritos with kidney beans, Cheddar cheese, and flavorful spices - perfect for a hearty vegetarian breakfast."
Ingredients:
  • 4 cloves garlic, minced
  • 6 cups canned kidney beans, drained
  • 2 cups water
  • 3 tablespoons soy sauce
  • 3 tablespoons chili powder
  • 4 teaspoons prepared mustard
  • 2 teaspoons ground cumin
  • 1 pinch cayenne pepper, or to taste
  • 4 cups mashed cooked sweet potatoes
  • 12 (10 inch) flour tortillas, warmed
  • 8 ounces shredded Cheddar cheese
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • 1. In a medium skillet, heat oil over medium heat. Saute onion and garlic until onion is soft. Mash beans into the mixture. Gradually pour in water and heat for 2 to 3 minutes. Remove from heat and stir in soy sauce, chili powder, mustard, cumin, and cayenne pepper.
  • Evenly distribute the bean mixture and mashed sweet potatoes onto warm tortillas, then sprinkle with cheese. Fold the tortillas burrito-style around the fillings and arrange them on a baking sheet.
  • Place in the oven and bake until heated through, approximately 12 minutes.
