Ingredients:
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 1 clove garlic, chopped
  • 2 pounds sweet potatoes, peeled and diced
  • 2 carrots, diced
  • 4 skinless, boneless chicken breast halves - diced
  • 2 tablespoons all-purpose flour
  • 1 cup dry white wine
  • 2 cups chicken stock
  • 0.25 cup half-and-half or light cream
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • In a large skillet over medium heat, heat oil until shimmering. Add onion and garlic, cooking and stirring until they just begin to turn golden. Stir in sweet potatoes and carrots, cooking until lightly browned, for a few minutes.
  • Create a space in the center of the pan by pushing the vegetables to the side. Add the chicken and sear it on all sides. Sprinkle flour over everything and mix well. Slowly pour in the chicken stock, making sure to scrape up any browned bits from the bottom. Stir in the wine. Transfer everything to a casserole dish and cover with a lid.
  • After baking for 1 hour in the preheated oven, allow it to slightly cool before gently folding in the cream to prevent curdling.
