Elevated chicken tenders coated in sweet potato crumbs, served with tangy sweet chili sauce.
Ingredients:
  • 135g packet sweet potato crisps
  • 125.00 ml panko breadcrumbs
  • 2 eggs, lightly beaten
  • 800g chicken tenderloins
  • Olive oil spray
  • Fresh mint leaves, to serve
  • Sweet chilli sauce, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and prepare a large baking tray lined with baking paper.
  • Crush crisps with your hands in a large bowl until coarsely crushed, then stir in breadcrumbs.
  • 1. In a shallow bowl, season the eggs with salt and pepper. 2. Dip the chicken into the seasoned egg mixture, then coat it with the breadcrumb mixture. 3. Place the coated chicken on a prepared tray and spray with oil. 4. Bake in the oven for 25 to 30 minutes until cooked through.
  • Serve crispy chicken tenders drizzled with a refreshing mint and sweet chili sauce.
