Homemade sweet potato gnocchi: Mashed sweet potatoes, egg, and flour create a restaurant-worthy pasta dish.
Ingredients:
  • 2 (8 ounce) sweet potatoes
  • 1 egg
  • 1 clove garlic, pressed
  • 0.5 teaspoon ground nutmeg
  • 2 cups all-purpose flour
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Bake sweet potatoes in the oven until tender, about 30 minutes. Allow to cool for 15 to 30 minutes before serving.
  • Peel skins off cooled potatoes, then mash the flesh in a large bowl or press through a ricer. Add egg, garlic, salt, and nutmeg. Gradually incorporate flour until a soft dough forms.
  • Boil a large pot of salted water.
  • While the water is heating up, prepare the gnocchi: Roll the dough on a floured surface into long, snake-like logs, then cut them into 1-inch pieces.
  • Drop the dough pieces into the boiling water and cook them until they float to the surface. Use a slotted spoon to transfer them to a serving dish, keeping them warm until serving.
