Golden hummus with roasted sweet potatoes and Mediterranean spices for a delicious and hearty appetizer.
Ingredients:
  • 3 sweet potatoes
  • 1 (15 ounce) can garbanzo beans, drained (reserve liquid) and rinsed
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 0.5 teaspoon lemon zest
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon ground coriander
  • 0.25 teaspoon ground white pepper
  • sea salt to taste
Instructions:
  • Preheat your oven to 400°F (200°C) to get it nice and hot for baking.
  • Pierce sweet potatoes all over with a fork to allow even cooking.
  • Roast sweet potatoes in the oven until tender for about 45 minutes. Allow them to cool before slicing them in half lengthwise.
  • In a blender, blend garbanzo beans and olive oil until mashed. Add sweet potato flesh, tahini, lemon juice, lemon zest, cumin, coriander, white pepper, and sea salt; blend until smooth, adding garbanzo bean liquid as needed for creaminess.
