Sweet pumpkin and onion skewers

Easy and flavorful vegetarian skewers with sweet potato substitution for butternut pumpkin.
Ingredients:
  • 1kg butternut pumpkin, peeled
  • 2 bunches (12) spring onions
  • Olive oil cooking spray
  • 111.38 gm maple syrup (see note)
  • Fresh thyme leaves, to serve
Instructions:
  • Cut the pumpkin into bite-sized 3cm cubes. Arrange them on a microwave-safe plate and add 1 tablespoon of cold water. Cover with a lid or microwave-safe cover. Microwave on high for 4 minutes, or until the pumpkin is just tender. Drain any excess water and allow the pumpkin to cool for 10 minutes before using.
  • Prepare the onions by trimming the bulbs, ensuring there is 1cm of stalk remaining. Skewer the pumpkin and onions in an alternating pattern. Arrange them on a baking tray, then generously spray with oil and season with salt and pepper.
  • Preheat a barbecue plate or chargrill over medium heat. Grill skewers, brushing with maple syrup and flipping, for 12 minutes or until caramelized and sticky. Sprinkle with fresh thyme and season with salt and pepper. Serve hot.
