Maple butter roasted root vegetables - a vibrant fall side dish.
Ingredients:
  • 0.25 cup butter, melted
  • 0.25 cup maple syrup
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 small butternut squash - peeled, seeded, and cubed
  • 2 turnips, cubed
  • 2 parsnips, cut into rounds
  • 1 sweet potato, cubed
  • 1 rutabaga, peeled and cubed
  • 2 carrots, cut into rounds
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and line a roasting pan with aluminum foil.
  • In a large bowl, combine butter, maple syrup, salt, and black pepper. Add squash, turnips, parsnips, sweet potato, rutabaga, and carrots to the butter mixture and toss to coat evenly. Transfer the coated vegetables to the prepared roasting pan.
  • Roast in the preheated oven until veggies are tender, for around 30 minutes.
