T's Maple-Vanilla Apple Pie Filling

Transform fresh fall apples into a delectable maple vanilla pie filling to store in the freezer for year-round pie making.
Ingredients:
  • 4.5 cups thinly sliced apples
  • 2.25 teaspoons lemon juice
  • 1.5 cups water
  • 0.25 cup honey
  • 0.25 cup maple syrup
  • 1 whole vanilla bean, split lengthwise and scraped
  • 0.25 cup cornstarch
  • 0.25 teaspoon ground nutmeg
Instructions:
  • Toss apple slices with lemon juice in a large bowl until well coated.
  • Combine water, honey, and maple syrup in a large pot over medium heat until they dissolve; add vanilla bean and stir. In a small bowl, mix cornstarch, cinnamon, salt, and nutmeg and stir into the pot until dissolved. Bring to a boil and cook for 2 minutes, stirring constantly.
  • Gently add apple slices to the boiling water. Cover the pot, simmer on medium-low heat, and cook until apples are tender, about 6 to 8 minutes.
  • Let the apples cool to room temperature for at least 30 minutes by removing the pot from the heat and taking off the lid.
