Tackee David's Split Pea with Ham

Flavorful split-pea soup with a generous ham bone.
Ingredients:
  • 1 pound dried split peas
  • 8 cups water
  • 1 meaty ham bone
  • 1 cup chopped onion
  • 0.25 teaspoon dried marjoram leaves, crushed
  • 0.25 teaspoon dried thyme leaves, crushed
  • 0.25 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper, or to taste
  • 1 cup chopped celery
  • 0.5 teaspoon salt, or to taste
Instructions:
  • In a large soup pot over medium heat, simmer peas and water until boiling. Allow to boil for 2 minutes, then set aside to cool off heat for 1 hour.
  • Add the ham bone to the pot along with the peas, onion, marjoram, thyme, garlic powder, and salt. Bring to a gentle boil, then lower the heat to a simmer, covering the pot. Let it simmer for 2 hours, giving it an occasional stir. Remove the ham bone, extract as much ham as you can, chop it, and put it back in the soup. Include the celery, discard the bone, and return the soup to a simmer for another 45 minutes, stirring occasionally. Adjust seasoning with salt before serving.
