Easy and fun taco pasta shells: beef, cheese, chili seasoning stuffed in jumbo shells, baked to perfection.
Ingredients:
  • 1.25 pounds lean ground beef
  • 1 (3 ounce) package cream cheese
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 18 jumbo pasta shells
  • 2 tablespoons butter, melted
  • 1 cup taco sauce
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1.5 cups crushed tortilla chips
  • 1 cup sour cream
Instructions:
  • In a large skillet over medium heat, cook the beef until no longer pink; then drain any excess fat. Stir in cream cheese, salt, and chili powder, and let simmer for 5 minutes.
  • While awaiting, heat up a large pot filled with lightly salted water until it boils. Add the pasta and cook until it is perfectly al dente, which should take about 8 to 10 minutes. Drain the pasta and mix it with butter.
  • Preheat your oven to 350°F (175°C).
  • Stuff shells with flavorful beef mixture, place in a 9x13-inch baking dish, drench generously with taco sauce, cover tightly with foil, and bake in a preheated oven for 15 minutes.
  • Top the dish with a layer of Cheddar cheese, Monterey Jack cheese, and tortilla chips, then bake for an additional 15 minutes until golden and bubbly.
  • Dollop sour cream generously on top before serving.
