Tahitian lime cheesecakes with ginger crumb

Quick and stunning lime cheesecake parfaits – ready in just 15 minutes.
Ingredients:
125g Arnott’s Ginger Nut biscuits
60g butter, melted
250g cream cheese, at room temperature
250ml (1 cup) thickened cream
125ml (1/2 cup) sweetened condensed milk
2limes, rind finely grated, plus 1 tbsp juice
Lime zest, to serve
Instructions:
Pulse biscuits in a food processor until they form fine crumbs. Add butter and blend. Set aside 2 tsp. Spoon the crumb mixture into four 300ml glasses.
Beat the cream cheese until smooth using electric beaters. Add thickened cream, condensed milk, and rind. Beat for 2-3 minutes until thick and creamy, then quickly mix in the lime juice.
Transfer the creamy cheese mixture to a piping bag with a 1cm fluted nozzle. Pipe onto the crumb mixture in the glasses. Sprinkle with remaining crumb mixture and lime zest. Serve promptly.
