Spicy beef and corn pot pie - a satisfying meal for the family.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 box (9 oz) frozen corn, thawed, drained
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (2 1/4 oz) sliced ripe olives, drained
  • 2 tablespoons Original Bisquick™ mix
  • 1/2 cup cornmeal
Instructions:
  • Preheat oven to 400°F. Cook ground beef in a 10-inch skillet over medium heat until fully cooked; remember to stir occasionally and drain any excess fat. Add in corn, tomatoes, olives, 2 tablespoons of Bisquick mix, chili powder, cumin, and salt. Bring the mixture to a boil, stirring regularly, and let it boil for 1 minute. Keep warm on low heat until ready to serve.
  • Combine the remaining ingredients in a medium bowl until well blended. Pour the beef mixture into an ungreased 9-inch square pan and evenly spread the cornmeal mixture over the beef.
  • Bake without covering for around 25 minutes or until the crust turns a light golden brown.
