Savor a flavorful sea bass chowder with potatoes, onions, and thyme, perfect for lunch or as a delectable dinner side. Pair with a slice of crusty bread for the ultimate meal.
Ingredients:
  • 2 yellow onions, diced
  • 3 ribs celery, diced
  • 0.5 cup white wine
  • 4 potatoes, chopped
  • 2 cups fish stock
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon seafood seasoning (such as Old Bay®)
  • 1 bay leaf
  • 1 cup heavy whipping cream
  • 1 (4 ounce) fillet sea bass, chopped, or more to taste
  • 3 dashes hot sauce
Instructions:
  • In a large stockpot over medium heat, sauté onions and celery in a mixture of olive oil and butter until softened, about 5 minutes. Pour in wine, increase heat to medium-high, and simmer until reduced by half, about 2 to 3 minutes.
  • Combine potatoes, fish stock, thyme, seafood seasoning, bay leaf, salt, and pepper with the onion mixture. Bring to a boil, then simmer covered on medium-low heat until potatoes are tender, about 10 to 15 minutes.
  • Gently warm the cream in a small saucepan over medium heat until steaming, about 5 minutes. Mix in the sea bass and cream with the potato mixture; simmer until sea bass is cooked through, about 10 minutes. Season the chowder with sugar, hot sauce, salt, and pepper to taste.
