Delicious pumpkin roll perfect for holidays or any occasion, sure to impress guests.
Ingredients:
  • 3 eggs
  • 1 cup white sugar
  • 0.66666668653488 cup solid pack pumpkin puree
  • 1 teaspoon lemon juice
  • 0.75 cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 cup chopped pecans
  • 1 cup confectioners' sugar
  • 4 tablespoons butter
  • 8 ounces cream cheese
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a jellyroll pan by greasing and flouring it.
  • In a mixing bowl, beat eggs on high for five minutes until light and fluffy. Slowly incorporate white sugar, pumpkin puree, and fresh lemon juice. Mix in flour, cinnamon, salt, baking powder, and ginger to create a smooth batter. Transfer the batter to a pan and spread it out evenly. Sprinkle pecans over the batter and gently press them in.
  • Bake until it springs back when touched, about 12 to 15 minutes. Gently loosen edges with a knife, then transfer onto two dishtowels dusted with powdered sugar. Roll up the cake and allow it to cool for approximately 20 minutes.
  • Prepare the filling by combining confectioners' sugar, vanilla, butter or margarine, and cream cheese until creamy.
  • Once the pumpkin cake has cooled, carefully unroll it and evenly spread the filling over it. Roll it back up gently and remove the dishtowel. Lay out a long sheet of waxed paper and transfer the pumpkin roll onto it. Lightly dust the pumpkin roll with powdered sugar. Roll up the pumpkin roll in the waxed paper, twisting the ends like a piece of candy. Refrigerate the pumpkin roll overnight to chill. Just before serving, dust the pumpkin roll with a little more powdered sugar for a finishing touch. Serve the pumpkin roll chilled for a delightful treat.
