Tandoori roast cauliflower with rice

Create a quick and tasty Indian-inspired veggie dish for Meatless Mondays in 30 minutes!
Ingredients:
  • 100g tandoori paste
  • 280g yoghurt
  • 1 cauliflower, cut into florets
  • 30.00 ml currants
  • 1 red onion, thinly sliced crossways
  • 1 lemon, juiced
  • 250g pkt 7 Ancient Grains microwavable rice
Instructions:
  • Preheat the oven to 250°C. Mix the tandoori paste with half of the yogurt in a large bowl. Add cauliflower and stir well. Transfer the mixture to a baking dish. Sprinkle with currants and drizzle with 1 tablespoon of water. Cover with foil and bake for 10 minutes. Remove foil and bake for an additional 15 minutes or until cauliflower is lightly charred and tender.
  • In a bowl, mix together onion and lemon juice. Cook rice according to package instructions.
  • Spread the rice evenly on a large serving platter. Spoon the cauliflower mixture on top. Sprinkle with the onion mixture. Mix the remaining yogurt with 1½ tablespoons of water in a bowl, then drizzle over the cauliflower before serving.
